Fireplace
A hearth is the one place a dark, dramatic stone earns its keep.
Fireplaces sit at eye level and are looked at rather than used. They are the right place for the stone that would be too much across a whole kitchen — Nero Marquina, Verde Alpi, a heavily veined quartzite.
Heat tolerance and a mechanically fixed substrate matter more than surface hardness in this application.
